With a rich and rather bitter taste, hazelnuts are a true treat. Their natural oils come out when roasting them, and then you mix them into a cream consistency and taste rich and sweet.
One other nutritious whole food source of fat that’s good for you is hazelnuts. Antioxidants abound, they’re a good means of potassium and protein, packed with vitamin E, and they have almost no saturated fat.
Making hazelnut butter requires no other ingredients than hazelnuts. If you prefer not to peel the hazelnuts, you may use blanched hazelnuts instead. You can even enjoy them raw.

How to Make Hazelnut Butter
1. Get Ready Your Nuts
To begin, bring the oven temperature up to 300ºF if using skinned hazelnuts. Evenly distribute the hazelnuts on a rimmed baking sheet and roast for 10–15 minutes, or until the skins begin cracking.
You may also buy blanched hazelnuts that have had their skins removed, so you won’t have to peel them. Warming the nuts beforehand helps in their speedier processing in the food processor, however, roasting them is not necessary in this instance.
2. Peel off the Skin
After roasting the hazelnuts have roasted, set them aside to cool until they are safe to hold. Once the hazelnuts are on a dry cloth, lightly massage them to loosen the skins. It’s OK if you can’t take the skin from every nut; the goal is to get rid of as much as you can. The more of the bitter hazelnut skin you can peel off, the nicer the nuts will taste.
3. Blending Time
In a blender or “S” blade food processor, add now the hazelnuts. Start processing without oil or anything else. Then put the cover on and run the nuts through the processor for about 5 minutes, or until they are smooth. At any moment, scrape the edges of the machine to remove any ground hazelnuts that may be climbing up.
Grind the hazelnuts until they begin to thicken into a paste; this should only take a few minutes. Just keep going for another four or five minutes until the sloshing sound becomes louder. When the hazelnut butter is ready, it should be very fluid and easily spoon-droppable. As soon as the nut butter becomes smooth, you may either leave it unsalted or add a touch of salt.
Take note: There are blenders that aren’t up to the task of turning nuts into butter. Neither regular blenders nor very strong ones with a small base are suitable for this process.
Using a food processor is a more fool-proof option in this case. When 5 minutes have passed, stop the machine and remove the lid. Stop and scrape down the sides, then secure the lid again and continue processing.
